- ⅓ cup (80 g) unsalted creamy peanut butter
- 2 tablespoon low sodium soy sauce or tamari
- ½ cup (120 ml) hot water
- 2 teaspoon apple cider vinegar or rice vinegar
- 2 tablespoon toasted sesame oil
- 1 tablespoon sriracha
- 1 tablespoon maple syrup or date syrup
For garnishing:
- Crushed peanuts
- Chopped scallions

Instructions
- Prepare the noodles:
- Bring a large pot of water to a boil and cook the noodles according to package directions. Once cooked, drain, rinse and set aside.
- Create the aromatic base:
- o Heat the oil in a large sauté pan over low heat. Add the garlic and ginger and sauté for about 2 minutes or until golden brown, being careful not to let the garlic burn. Remove from heat.
- Make the peanut sauce:
